Item Description
Whole kosher brisket, prepared Texas BBQ style. Serves 10.
For the past 30 years, home chef Scott Bieber has been working on perfecting his smoked brisket technique. Winner is buying a fully cooked brisket which will be sliced, shredded, or left whole, depending on your preference.
Unlike your Bubbie’s Ashkenazi brisket, Scott uses 'low and slow' Texas smoking methods to prepare this hearty piece of beef, allowing the steady heat to break down the proteins and fats in the meat, while adding smokey flavor.
One characteristic of Texas brisket is the bark – a crispy, flavorful crust formed by the slow smoking process. This bark - plus the delicious burnt ends - are a meat-lover’s delight.
The winner of this item will partner with Scott to agree on a time and date.
Generously donated by Scott Bieber (former camp parent, current staff parent)
